  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness, about 1/2 inch.
  3. Set up a breading station with the flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
  4. Dredge the chicken in the flour, then dip it in the egg, and finally coat it in the breadcrumb-Parmesan mixture.
  5. Heat a large skillet over medium-high heat and add enough oil to lightly coat the bottom.
  6. Fry the breaded chicken for 2-3 minutes per side, or until golden brown.
  7. Transfer the fried chicken to a baking dish and top with the marinara sauce and shredded mozzarella cheese.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
